I just wanted to share a couple of the sites she mentioned for things I hadn't seen before in case someone else might be interested, too:

A high protein alternative flour is MESQUITE FLOUR (also high in carbs if you're watching those) from: http://www.casadefruta.com/detail.aspx?ID=15 . She said it has a smoky-mocha-type flavor. There's a better description on the site.

Another option for sauce thickening and fiber (thus helping cholesterol) is oat bran from:
